Seafood Cooking Tips
Baking: Thaw Lobsters in refrigerator for a couple of hours. PREHEAT oven to 450 degrees. Place a little water or white wine in bottom of baking dish. Baste tails with lemon, butter and white wine.
4-6 oz. – 8-10 minutes
6-7 oz. – 11-12 minutes
8-9 oz. – 12-14 minutes
10-11 oz. – 14-15 minutes
12-16 oz. – 18-20 minutes
16-24 oz. – 20-25 minutes
Boiled Lobster Tails
Fill a large saucepan with water and add 1 teaspoon of salt for each litre of water. Bring the water to the boil and drop the lobster tails into the pan. Boil the tails for about 1 minute per oz of total weight. If there are 5 oz of lobster tails, you will need to cook them for 5 minutes.
Fresh Flounder Stuffed with Lobster and Scallop
Baking: Place water and lemon juice, or white wine in pan. Place lemon and butter on top of fish. PREHEAT oven to 375 degrees. Bake for 18-20 minutes.
Jumbo Lump Crab Cakes, Salmon Cakes & Shrimp Cakes
Baking: Place items on flat pan. Bake in PREHEATED 375 degree oven for 15-16 minutes.
Pan Frying: Press cakes down to 1 inch in size. Pan fry in butter or oil for 2 minutes a side, or until golden brown.
Crusted Tilapia & Potato Crusted Cod
Bake in a PREHEATED 375 degree oven for 14 to 16 minutes.
Bake in a PREHEATED 350 degree oven for 15 to 18 minutes, or until cheese is golden brown.
Breaded Jumbo Shrimp & Oysters
Pan-fry in butter or oil for 1 to 2 minutes a side, or until golden brown.
Fresh Portabella Mushrooms Stuffed Lobster & Scallops
Baking: Place water or milk or white wine in pan. PREHEAT oven to 375 degrees. Bake for 20-25 min.
